2014 Vintage Cider

APPLES 

A blend of apples are juiced to give a fruity but crisp acid Juice 


ALCOHOL 

7.5% 


ABOUT THE CIDER 

This is the melding of cider with traditional winemaking techniques. Clarified juice is completely fermented to dryness in the primary fermentation. The wine then has a liqueur added for a secondary fermentation in bottle – Traditional bottle fermented style. This vintage has had 3 ½ years ageing on yeast lees. It is riddled, disgorged and a liqueur added ready for final consumption. 


APPEARANCE 

Golden Straw coloured 


AROMA 

As well as a fruity apple aroma, toasty yeast and baked apple characters have developed with the bottle ageing. 


AS YOU TASTE IT 

With a higher alcohol and the bottle ageing this is a more complex cider. It is elegant and refined on the palate like sparkling wine but a little lighter with some fruity notes. The ageing of the cider has given some baked notes and the yeasty creamy mouthfeel is satisfying. The finish is clean and crisp. The final sugar level is low but enough to enhance the fruit.

2017 Vintage Pear Perry


FRUIT 

Perry is pear cider. Cloudy pear juice was used to give mouthfeel and body. 


ALCOHOL 

7.0% 


ABOUT THE CIDER 

This is the melding of cider with traditional winemaking techniques. Pear juice is completely fermented to dryness in the primary fermentation. Prior to secondary fermentation in bottle, Traditional bottle fermented style – this Pear Cider was aged in a used oak cask for 6 months. After a further year ageing on yeast lees it was riddled, disgorged and a liqueur added. 


APPEARANCE 

A green tinge comes through with the pear cider.  


AROMA 

The aroma is more of crisp pears than stewed fruit. We are hopeful of a subtle Oak note. 


AS YOU TASTE IT 

The combination of higher alcohol, oak and bottle ageing with Pear Juice adds layers of complexity. Pears have complex sugars which lend mouthfeel and depth to the mid palate. Mouth-filling and slightly creamy the addition of a liqueur enhances the fruity notes.

2019 Pear Natural Perry


FRUIT 

New seasons pears are juiced and chilled. 


  ALCOHOL 

5.5% 


  ABOUT THE CIDER 

Pear Nat – New age or Old school, not quite sure but this is a bit of a play with some Perry cider and the name Petillant Naturel associated with cloudy sparkling wines. This is your “fresh as” Perry cider. Whilst the Pear juice was fermenting we rapidly cooled and naturally settled to stop the fermentation with a little natural sugar remaining. After bottling we allow it to warm and restart fermentation in the bottle. The result an effervescent, fruity but dry, cloudy brew.


APPEARANCE 

Gold straw in colour, clear when settled but cloudy when stirred. 


AROMA 

The nose is fruity and fresh and the yeast adds a bit of depth 


AS YOU TASTE IT 

With nothing but pears and yeast at work, what you see is what you get. The natural sorbitol (careful, don’t drink too much) in pears leaves some mouthfeel and body. It’s dry but fruity and has fresh crispy elements combined with some robust yeasty notes.
