ABOUT THE CIDER
This is the melding of cider with traditional winemaking techniques. Clarified juice is completely fermented to dryness in the primary fermentation. The wine then has a juice liqueur added for a secondary fermentation in bottle – Traditional bottle fermented style. After 12 months ageing on yeast lees it is riddled, disgorged and a juice liqueur added to give a more complex cider
As well as a fruity apple aroma a toasty yeast character has developed with the bottle ageing.
AS YOU TASTE IT
With a higher alcohol and the bottle ageing this is a more complex cider. It is elegant and refined on the palate like sparkling wine but a little lighter with some fruity notes. The yeasty creamy mouthfeel is satisfying and the finish is clean and crisp. The final sugar level is low but enough to enhance the fruit.
